How to Grill an Extra Thick Steak

1. Remove the steaks from the refrigerator and allow them to come to room temperature. Season steaks on both sides with salt and pepper to taste. Sear the beef on a hot grill about 5 minutes on the first side and 3 minutes on the second side.

2. Move the steak onto the cool side of the grill and with the lid down cook to your preference using a meat thermometer, about 10-12 minutes for rare (when a meat thermometer registers 120°F).

3. Remove the steaks from the grill and allow the steaks to rest on the rack for about 10 minutes. Cover and keep warm while resting.
