Lemon Dill Pollock
(serves 4)

1/3 cup minced fresh dill
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon black pepper
4 (6-ounce) Pollock fillets
1/4 cup fresh lemon juice
4 teaspoons Dijon mustard
1/4 teaspoon sugar
1 garlic clove, minced
Cooking spray

1. Combine all ingredients except cooking spray in a large zip-top plastic bag. Seal and marinate in refrigerator 20 minutes. Remove fish from bag, discard marinade. Prepare grill or broiler. Place fish on a grill rack or broiler pan coated with cooking spray. Cook for 4 minutes on each side or until fish flakes easily when tested with a fork.
