Halibut with Roasted Garlic Breadcrumbs
(serves 4)

Herbed Breadcrumbs:

3 tablespoons butter
salt & pepper
8 slices fresh white bread
3 tablespoons chopped parsley

1. Place bread in food processor and process into crumbs. Add butter until moist. Stir in parsley. Season with salt and pepper.


2 tablespoons melted butter
1/3 cup mayonnaise
4 halibut steaks
1 teaspoon roasted garlic
salt and pepper
1 ounce olive oil

1. Preheat oven to 350 degrees. Combine garlic with mayonnaise. Season steaks with salt and pepper. Dredge in flour. Preheat sauté pan. Add oil. Cook halibut for about 3 minutes, flip to second side. Top with garlic-mayonnaise mixture and then fresh breadcrumbs. Drizzle with melted butter. Bake for 6-7 minutes. Serve atop a bed of sautéed leeks with mashed potatoes.
